Ingredients

Scale
  • 2 cans (15 oz each) cannellini beans or great northern beans
  • 1 cup cottage cheese
  • 1/3 cup hot sauce
  • 1/4 cup ranch dressing or bleu cheese dressing
  • 1 1/2 cups shredded cheddar cheese
  • 1/4 teaspoon garlic powder
  • Salt and pepper, to taste
  • 2 tablespoons diced green onion, for garnish
  • Tortilla chips, crackers, or celery sticks, for serving

Instructions

  1. Heat the oven.
Preheat your oven to 350°F so it is ready when the dip is mixed and assembled. A properly heated oven helps the Vegetarian Cheesy White Bean Buffalo Dip bake evenly and melt smoothly.
  2. Prepare the beans.
Drain the beans well and rinse them under cold water. Add them to a food processor and pulse several times until the beans break down. Stop before they become completely smooth; a slightly chunky texture makes the Vegetarian Cheesy White Bean Buffalo Dip feel heartier and more satisfying.
  3. Mix the dip base.
Scoop the mashed beans into a large mixing bowl. Add the cottage cheese, hot sauce, ranch dressing or bleu cheese dressing, 1 cup of the shredded cheddar, garlic powder, and a generous amount of salt and pepper. Stir thoroughly until the mixture looks evenly combined and creamy. The base of the Vegetarian Cheesy White Bean Buffalo Dip should be thick, well seasoned, and easy to spread.
  4. Transfer to a baking dish.
Spoon the mixture into an 8-inch baking dish and spread it into an even layer. Smooth the top with a spatula so the Vegetarian Cheesy White Bean Buffalo Dip bakes consistently.
  5. Add the remaining cheese.
Sprinkle the rest of the cheddar over the top. This creates the melty, golden finish that makes the Vegetarian Cheesy White Bean Buffalo Dip so appealing when it comes out of the oven.
  6. Bake until hot.
Place the dish in the oven and bake for 25 to 30 minutes, or until the dip is hot throughout and the cheese has melted fully. The edges should look bubbly and the center should be soft and creamy.
  7. Broil for a melted top.
Switch the oven to broil and broil for about 5 minutes, watching closely the entire time. This final step helps the cheese on top melt completely and develop a lightly browned finish. Stay nearby so the Vegetarian Cheesy White Bean Buffalo Dip does not overcook.
  8. Garnish and serve.
Remove the dip from the oven, sprinkle the diced green onions over the top, and serve it warm with tortilla chips, crackers, and/or celery sticks. The Vegetarian Cheesy White Bean Buffalo Dip tastes best fresh from the oven while the top is still melty and the center is creamy.
