  • 1/2 teaspoon finely grated lime zest
  • 1/4 cup freshly squeezed lime juice
  • 1/8 teaspoon ground nutmeg or cinnamon
  • 3/4 cup neutral salad oil

Instructions

  1. Slice the watermelon into manageable sections, remove the rind, and cut the flesh into evenly sized cubes. Place the cubes into a large serving bowl that gives you plenty of room to toss everything together later without crushing the fruit.
  2. Wash the strawberries thoroughly under cool water and gently pat them dry. Remove the green tops, then slice each berry into even pieces. Add the strawberries to the bowl with the watermelon so the fruit is evenly distributed.
  3. Stack the fresh mint leaves together and roll them tightly before slicing them into thin ribbons. Sprinkle the mint evenly across the fruit. Finish by adding a small pinch of salt, which helps highlight the natural sweetness of the watermelon and strawberries.
  4. To prepare the vinaigrette, combine the honey, freshly grated lime zest, lime juice, and ground nutmeg or cinnamon in a small mixing bowl. Whisk until the honey is fully dissolved and the mixture becomes smooth.
  5. Continue whisking while slowly pouring in the salad oil in a thin, steady stream. Adding the oil gradually allows the dressing to emulsify, creating a silky consistency that lightly coats the fruit instead of separating.
