  • 1 pound ground beef
  • 6 taco-size flour tortillas
  • 1 cup shredded cheddar cheese
  • Seasoning of choice

  • ¼ cup ketchup
  • 1 tablespoon mustard
  • 2 tablespoons pickle relish

Instructions

  1. If you’re making the homemade sauce, combine the mayonnaise, ketchup, mustard, and pickle relish in a small bowl and stir until fully blended. This step is entirely optional — a store-bought burger sauce or your own favorite condiments will work just as well if you’d rather skip mixing one from scratch.
  2. Set a Blackstone griddle, cast iron skillet, or even a regular pan over medium-high heat and let it fully preheat before you start cooking.
  3. Divide the raw ground beef into six roughly equal portions. Working with one tortilla at a time, press a portion of beef directly onto the surface, spreading and smashing it out into a thin, even layer that reaches all the way to the edges of the tortilla — keep in mind the beef will shrink somewhat as it cooks, so covering the full surface now helps maintain good coverage later. Once each tortilla is topped with its beef layer, sprinkle the seasoning of your choice evenly over the meat.
  4. Lightly coat your preheated cooking surface with oil. The exact amount will depend on both your pan and the fat content of your beef — as a general guide, about 2 tablespoons works well on a large griddle surface.
  5. Carefully place each tortilla onto the hot, greased cooking surface with the beef side facing down, making direct contact with the heat. Let them cook undisturbed for approximately 2 minutes, allowing the beef to sear and begin browning.
  6. Flip each taco over so the tortilla side is now facing down and the cooked beef is on top. Immediately sprinkle shredded cheese generously over the hot beef. Continue cooking for another 1 to 3 minutes, keeping a close watch the entire time, until the tortilla underneath turns crisp and golden and the beef is cooked through to your liking. Because everything cooks so quickly at this heat level, tortillas can go from perfectly done to burnt in a short window, so don’t step away during this stage.
  7. Once cooked, remove each taco from the heat and immediately add whatever toppings you’d like — shredded lettuce, diced tomato, pickles, and a drizzle of the burger sauce all work beautifully together.
  8. Fold each taco in half, just as you would a traditional taco, and enjoy while everything is still warm and the cheese is at its meltiest.

Notes

  • If the idea of raw ground beef going directly onto a tortilla feels unusual, there’s no need to worry — because the beef is smashed so thin, it cooks through completely and quickly on both sides.
  • Press the beef all the way out to the very edge of each tortilla, since ground beef shrinks noticeably as it cooks and you’ll want good coverage once it’s done.
  • A Blackstone griddle or a well-seasoned cast iron skillet works best for this recipe, since a really hot, even surface is what creates that crispy, smashed-burger texture. A nonstick pan on the stovetop will still work fine if that’s what you have available.
  • Corn tortillas can be used in place of flour tortillas, though they tend not to hold together quite as well once loaded with beef and toppings.
  • Any type of cheese works here, but shredded cheese is recommended since it melts roughly twice as fast as sliced cheese. Covering the pan with a lid during the last minute of cooking can help the cheese melt even more quickly.
  • In the rare event you end up with leftovers, they reheat well the next day in an air fryer at 390°F for about 5 minutes.
