These Slow Cooker Smothered Fritos Taco Bowls are a hearty Tex-Mex meal made with seasoned beef, chili beans, tomato sauce, and Rotel, then served over crunchy Fritos with all your favorite toppings. They are simple, filling, and perfect for busy nights, game day, potlucks, or any time you need an easy crowd-pleasing dinner.

  • 1 1/2 pounds lean ground beef
  • 1 cup chopped onion, yellow or sweet
  • 2 cans (16 ounces each) Bush’s Best Chili Beans, undrained
  • 1 can (8 ounces) tomato sauce
  • 1 can Original Rotel, 10 ounces, undrained
  • 1 packet taco seasoning, 1 ounce
  • 1/2 cup water
  • Fritos, for serving
  • Rice, optional
  • Favorite taco toppings: cheddar cheese, lettuce, tomato, jalapeños, sour cream, hot sauce, avocado, fresh lime juice, fresh cilantro, and more

Instructions

  1. Set a large skillet over medium-high heat. Add the ground beef and chopped onion. Cook, breaking the meat into smaller pieces as it browns, until the beef is fully cooked and no pink remains and the onion becomes soft and translucent.
  2. Stir in the taco seasoning and the water. Mix thoroughly so the seasoning spreads evenly through the meat. Remove the skillet from the heat.
    If your beef has a higher fat content, drain off the excess grease before adding the seasoning.
  3. Lightly coat the inside of the slow cooker with non-stick cooking spray.
  4. Pour the chili beans, tomato sauce, and Rotel into the slow cooker. Add the seasoned beef and onion mixture on top.
  5. Stir everything together until the mixture looks evenly combined.
  6. Cover the slow cooker and cook on high for 3 to 4 hours or on low for 5 to 6 hours.
  7. When ready to serve, place a layer of Fritos in individual bowls. If using rice, add a small scoop first. Spoon a generous portion of the hot beef mixture over the top.
  8. Finish each bowl with your favorite toppings. A squeeze of fresh lime and a sprinkle of cilantro give the bowls a bright, fresh finish. Serve immediately.
