Ingredients

Scale
  • 1 ½ lb Steak, cut into strips
  • 1 Red bell pepper, sliced
  • 1 cup Beef broth
  • ½ cup Low-sodium soy sauce
  • ½ cup Brown sugar
  • 3 tbsp Sesame oil
  • ½ tsp Red pepper flakes
  • 3 cloves Garlic, minced
  • 3 Green onions, sliced
  • 2 tbsp Cornstarch
  • 2 cups Broccoli florets
  • 2 packages Ramen noodles
  • Sesame seeds, for garnish

Instructions

  1. Place the beef and bell pepper into the slow cooker.
Add the sliced steak and the red pepper strips directly to the crockpot. Spread them out a bit so the sauce can reach every piece.
  2. Mix the sauce in a separate bowl.
Stir together the beef broth, soy sauce, brown sugar, sesame oil, red pepper flakes, minced garlic, sliced green onions, and cornstarch. Keep stirring until the mixture looks smooth and the cornstarch disappears into the liquid.
  3. Pour the sauce over the meat.
Transfer the sauce into the slow cooker and make sure it covers the beef and peppers well. This helps Slow Cooker Beef and Broccoli Ramen develop flavor from the inside out.
  4. Cook until the beef turns tender.
Cover the slow cooker and cook on LOW for 4 to 6 hours. Check the meat toward the end of the cooking window. It should feel tender and easy to slice or bite through.
  5. Add the broccoli and ramen at the end.
About 30 minutes before serving, add the broccoli florets and the ramen noodles. Stir everything together so the noodles begin to soften and the broccoli warms through. Keep an eye on the texture and stir a few times so the noodles do not stick.
  6. Finish and serve.
Spoon the Slow Cooker Beef and Broccoli Ramen into bowls and sprinkle sesame seeds on top. Add extra green onions if you like a fresher finish, then serve hot.
