These Sausage Egg and Cheese Roll Ups are a warm, satisfying breakfast made with fluffy scrambled eggs, savory sausage, and melted cheddar wrapped in soft tortillas. They are easy to make, simple to customize, and perfect for breakfast or brunch.

Ingredients

  • 8 large eggs, room temperature
  • 1/4 cup milk
  • Salt, to taste
  • Pepper, to taste
  • 8 pre-cooked breakfast sausage links
  • 8 flour tortillas, 8-inch size, soft and flexible
  • 1 cup shredded cheddar cheese
  • 1 tablespoon butter
  • Non-stick cooking spray for the skillet, or extra butter if preferred

Instructions

  1. Make the egg mixture.
    Crack the eggs into a large bowl. Pour in the milk, then season with salt and pepper. Whisk everything together until the eggs look smooth, well combined, and lightly foamy.
  2. Scramble the eggs.
    Set a non-stick skillet over medium heat and melt the butter. Pour in the egg mixture. Stir slowly and gently with a spatula as the eggs cook, keeping them soft and fluffy. Cook for about 5 to 7 minutes, or until the eggs are just set but still tender. Remove the skillet from the heat so the eggs do not overcook.
  3. Warm the tortillas.
    To make them easier to roll, warm the tortillas briefly in a dry skillet or in the microwave for a few seconds. The goal is just to soften them, not toast them.
  4. Build each roll-up.
    Place one tortilla on a flat surface. Set one sausage link along one side of the tortilla. Spoon a tablespoon or so of scrambled eggs over the sausage, then add a generous sprinkle of shredded cheddar cheese over the top.
  5. Roll them tightly.
    Fold in the sides as you roll the tortilla up around the filling. Keep the roll snug so the eggs, sausage, and cheese stay inside while cooking.
  6. Brown the outside.
    Wipe out the skillet, then lightly coat it with non-stick cooking spray or a little more butter. Return it to medium heat. Place the roll-ups seam-side down in the pan and cook for about 2 to 3 minutes per side, or until the tortillas are golden brown and lightly crisped.
  7. Serve right away.
    Transfer the roll-ups to plates while they are hot and melty. Serve them as they are, or offer salsa or hot sauce on the side for extra flavor.
