These Samoa Apple Slices are a fun, no-bake snack with crisp apple rounds topped with creamy almond butter filling, coconut, and a smooth chocolate drizzle. They taste like a healthier take on a classic Samoa cookie and come together fast with simple pantry ingredients.

Ingredients

Scale
  • 2 medium apples of choice
  • 1/2 cup smooth natural almond butter
  • 1/3 cup maple syrup
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • 3/4 cup unsweetened shredded coconut
  • 3 tablespoons vanilla protein powder
  • 1/2 cup non-dairy chocolate chips

Instructions

  1. Line a baking sheet with parchment paper and set it aside so the finished Samoa Apple Slices have a clean surface to rest on.
  2. Wash the apples thoroughly. Slice each apple into round pieces, aiming for about six slices per apple, or more if you prefer thinner slices. Try to keep the slices fairly even so they hold the topping well.
  3. Use a small knife or a round cutter to remove the center of each apple slice. Cut out the core area so each piece looks like a ring.
  4. In a mixing bowl, stir together the almond butter, maple syrup, and vanilla extract until the mixture looks smooth and creamy.
  5. Add the shredded coconut, protein powder, and pinch of salt. Mix again until everything is evenly combined and the filling becomes thick and scoopable.
  6. Spoon the Samoa mixture onto each apple slice. Spread it gently so the topping covers the center without spilling over the sides too much.
  7. Place the topped apple slices on the prepared baking sheet and transfer them to the refrigerator while you melt the chocolate. This helps the filling firm up slightly.
  8. Add the chocolate chips to a microwave-safe bowl or heat-safe bowl and melt them until smooth, stirring as needed so the chocolate stays glossy and silky.
  9. Drizzle the melted chocolate over the apple slices. Let the chocolate set before serving so the topping firms up and the slices are easier to handle.

Notes

Store the finished Samoa Apple Slices in an airtight container in the refrigerator for up to 5 days.
