This Pineapple Salsa is a fresh, sweet, spicy, and juicy topping that works beautifully with tortilla chips, tacos, burrito bowls, grilled vegetables, and more. It comes together quickly with just a few simple ingredients and tastes even better after a short chill.

  • 2 cups diced fresh pineapple
  • 1/4 cup diced red onion
  • 1/2 jalapeño pepper, diced
  • Juice and zest of 1 lime
  • 1/2 cup chopped fresh cilantro
  • 1 garlic clove, minced
  • 1/4 teaspoon sea salt
  • Tortilla chips, for serving

Instructions

  1. Prepare the produce.
    Dice the pineapple into small, even pieces so the salsa mixes well and every bite has a little of everything. Finely chop the red onion, jalapeño, cilantro, and garlic. The smaller the pieces, the better the final texture of Pineapple Salsa.
  2. Mix everything together.
    Add the pineapple, red onion, jalapeño, lime juice, lime zest, cilantro, minced garlic, and sea salt to a medium mixing bowl. Stir gently but thoroughly until all the ingredients are evenly combined. At this stage, Pineapple Salsa should already look colorful and smell fresh.
  3. Taste and adjust if needed.
