  • 1 tablespoon unsalted butter
  • 1 teaspoon olive oil
  • 1 teaspoon brown sugar
  • 1 medium pear, thinly sliced (Bosc or Bartlett work well)
  • 1 medium apple, thinly sliced (Granny Smith or Honeycrisp preferred)
  • 8 slices sourdough bread
  • 8 ounces sharp white cheddar cheese, sliced
  • 2 tablespoons mayonnaise (optional, for spreading)
  • 1 teaspoon fresh thyme leaves (optional)
  • Salt and pepper, to taste

Instructions

  1. Set a large skillet over medium-low heat and add the butter along with the olive oil, letting the butter melt fully into the oil. Add the thinly sliced onion to the skillet along with a small pinch of salt, stirring occasionally so the onions cook evenly. Continue cooking this way for about 12 minutes, until the onions turn soft, translucent, and take on a light golden color throughout.
  2. Sprinkle the brown sugar directly over the softened onions and stir it through evenly. Continue cooking for another 3 to 4 minutes, stirring occasionally, until the onions deepen into a rich, caramelized brown color — watch them closely during this stage, since they can go from perfectly caramelized to burnt fairly quickly once the sugar is added. Once they reach that deep golden-brown color, remove the skillet from the heat and set the caramelized onions aside.
  3. Wipe out or grab a second clean skillet or griddle and preheat it over medium heat. If you’re using mayonnaise, spread a thin, even layer over one side of each of the 8 bread slices — this step helps the bread brown more evenly and adds a subtle richness to the finished crust.
  4. Begin assembling each sandwich by placing a bread slice mayonnaise-side down on a clean surface. Layer on a portion of the sliced sharp white cheddar cheese, followed by a generous spoonful of the caramelized onions, several thin slices of pear, several thin slices of apple, and a sprinkle of fresh thyme leaves if you’re using them. Season lightly with salt and pepper, then top with a second slice of bread, mayonnaise-side facing outward. Repeat this process until all four sandwiches are fully assembled.
  5. Carefully transfer the assembled sandwiches onto the preheated skillet or griddle. Grill for approximately 3 to 4 minutes on the first side, pressing down gently with a spatula to help the cheese melt evenly and the layers hold together. Carefully flip each sandwich and grill for another 3 to 4 minutes on the second side, continuing to press gently, until both sides are evenly golden brown and the cheese inside has fully melted.
  6. Once the bread is golden and the cheese is completely melted, remove the sandwiches from the skillet and let them rest on a cutting board for about a minute — this brief rest helps the layers set slightly, making them easier to slice cleanly. Slice each sandwich in half on the diagonal.
  7. Serve the sandwiches warm, alongside a few crisp apple slices or a simple light green salad, for a complete and satisfying meal.
