Oven Roasted Cabbage Steaks are a simple, crispy, and flavorful vegetable side made with thick cabbage slices brushed in a smoky herb seasoning and roasted until golden brown. They work well with almost any main dish and come together with just a few pantry ingredients.

  • 3 tablespoons olive oil, or melted butter for a richer flavor
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon dried thyme
  • 1 teaspoon salt, adjust to taste
  • 1/2 teaspoon black pepper
  • Optional toppings: grated Parmesan cheese, red pepper flakes, fresh parsley

Instructions

  1. Preheat the oven to 400°F (200°C). Prepare a large baking sheet by lining it with parchment paper or lightly greasing it so the cabbage does not stick as it roasts.
  2. Remove any outer leaves that look wilted, dry, or damaged. Keep the cabbage core intact, then use a sharp knife to slice the head into thick 3/4-inch rounds. These thick slices are what create the steak shape and help Oven Roasted Cabbage Steaks stay together while baking.
