These McGriddle Bites are a quick sweet-and-savory breakfast made with pancake mix, sausage, cheddar, and maple syrup. They bake up into fluffy mini muffins that are perfect for busy mornings, freezer meal prep, and easy grab-and-go breakfasts.

Instructions

  • 2 cups Hungry Jack Pancake Mix
  • 1 1/2 cups water
  • 1 lb breakfast sausage
  • 1 cup shredded cheddar cheese
  • 1/4 cup maple syrup

Notes

  1. Brown the sausage
    Place the breakfast sausage in a skillet over medium-high heat. Cook it until it is fully browned and no pink remains, breaking it into small crumbles as it cooks. Once done, drain the grease very well and set the sausage aside. Removing as much grease as possible helps keep the final McGriddle Bites from turning oily.
  2. Make the batter
    In a large mixing bowl, combine the pancake mix and water according to the package directions. Stir until the batter comes together smoothly and no dry pockets remain. The consistency should be thick enough to hold the sausage and cheese, but still easy to scoop.
  3. Add the mix-ins
    Fold the cooked sausage, shredded cheddar cheese, and maple syrup into the batter. Stir everything together with a spoon or spatula until the ingredients are evenly distributed. The batter should look full and well mixed, with the sausage and cheese spread throughout.
  4. Prepare the mini muffin pan
    Preheat the oven to 400°F. Lightly grease a mini muffin pan if needed. If you are using silicone mini muffin pans, you may not need any spray at all. Fill each mini muffin cup a little more than halfway with the batter, since the McGriddle Bites will rise as they bake.
  5. Bake the bites
    Place the pan in the preheated oven and bake for 12 to 15 minutes, or until the tops are golden brown and the centers are cooked through. Keep an eye on them near the end of baking so they do not overbake. The bites should look set and lightly browned on top.
  6. Cool and serve
