Ingredients

Scale
  • 4 bone-in pork chops
  • 4 slices bacon, cooked and crumbled
  • 1 tablespoon maple syrup
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • Salt, to taste
  • 1/4 cup butter
  • 1/4 cup all-purpose flour
  • 2 cups milk
  • 1/2 cup heavy cream
  • 1/4 cup Dijon mustard
  • 2 cloves garlic, minced
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper

Instructions

  1. In a shallow dish, stir together the maple syrup, 1 teaspoon of Dijon mustard, garlic powder, black pepper, and a small pinch of salt. Whisk until the mixture is smooth and evenly combined.
  2. Add the pork chops to the marinade and turn them so both sides are coated well. Cover the dish and place it in the refrigerator for at least 30 minutes. For stronger flavor, let the pork chops marinate for up to 4 hours.
  3. While the pork chops marinate, cook the bacon until crisp. Drain it well, then crumble or chop it into small pieces and set it aside for serving.
  4. Cook the pork chops using your preferred method.
For grilling, heat the grill to medium-high and cook the chops for 4 to 6 minutes per side, or until they reach an internal temperature of 145°F.
For pan-searing, heat a large skillet over medium-high heat and cook the pork chops for 3 to 5 minutes per side, or until they are golden-brown and fully cooked.
  5. As the pork chops cook, prepare the sauce. Set a saucepan over medium heat and melt the butter. Once the butter melts, whisk in the flour and cook for about 1 minute, stirring the whole time so the mixture stays smooth. This creates the base for the sauce.
  6. Slowly pour in the milk and heavy cream while whisking constantly. Keep whisking until the mixture thickens into a smooth, creamy sauce, which usually takes about 3 to 5 minutes.
  7. Stir in the remaining Dijon mustard, minced garlic, salt, and black pepper. Reduce the heat to low and let the sauce simmer gently for 1 more minute so the flavors meld.
  8. Plate the pork chops and spoon the sauce generously over the top. Finish with the crumbled bacon and serve right away.
