These Lemon Rice Krispy Treats are soft, chewy, and bright with fresh citrus flavor, then finished with a smooth white chocolate drizzle. They come together without baking and make an easy, cheerful dessert for spring gatherings, parties, or kid-friendly snacking.

  • 6 cups Rice Krispies cereal
  • 3 tablespoons unsalted butter
  • 3 cups mini marshmallows, using a mix of yellow lemon-flavored and classic white if available
  • Zest of 1 lemon, plus a little extra for garnish
  • 1/2 teaspoon lemon extract, optional
  • 1/2 cup white chocolate chips or melting wafers
  • Lemon peel or extra zest, for garnish

Instructions

  1. Prepare the pan
    Grease a 9×9-inch baking dish thoroughly, or line it with parchment paper so you can lift the bars out easily after they set. This keeps the treats from sticking and makes slicing much simpler later on.
  2. Melt the butter and marshmallows
    Set a large saucepan over low heat and melt the butter first. Once it is fully melted, add the mini marshmallows. Stir constantly until the mixture turns smooth, glossy, and completely melted. Keep the heat low so the marshmallows stay soft and do not overcook. Stir in the lemon zest and lemon extract if you are using it.
  3. Add the cereal
    Take the pan off the heat and immediately pour in the Rice Krispies cereal. Stir until every piece is coated in the marshmallow mixture. Move quickly so the mixture stays workable, but mix gently enough to keep the cereal from breaking down.
  4. Transfer and shape the bars
    Scoop the mixture into the prepared pan and spread it into an even layer. Use a buttered spatula or a sheet of wax paper to press it down lightly. Do not pack it too tightly — that is the key to keeping the bars soft, chewy, and easy to bite.
  5. Add the white chocolate drizzle
    Place the white chocolate chips or wafers in a microwave-safe bowl and heat them in short 20-second bursts, stirring between each one until the chocolate melts smoothly. Drizzle the melted chocolate over the top of the bars in thin lines or a loose zigzag pattern. Finish with a sprinkle of lemon zest or a few curls of lemon peel for a bright, polished look.
  6. Let the treats set
    Leave the pan at room temperature for at least 30 minutes so the bars can firm up enough to cut cleanly. Once set, slice into squares and serve. For a firmer chew and a brighter citrus taste, these Lemon Rice Krispy Treats are especially good chilled.
