  • 1 ball Easy pizza dough, or store-bought dough
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon water
  • 1 tablespoon fresh parsley, chopped
  • 1 small garlic clove, grated
  • 1 teaspoon lemon zest
  • 2 tablespoons lemon juice, divided
  • 1/4 teaspoon fine salt
  • 1/4 teaspoon black pepper
  • 5 oz fresh mozzarella, or 1/2 to 1/3 cup shredded firm mozzarella
  • 2 tablespoons grated parmesan cheese
  • 1 tablespoon fresh parsley, for garnish
  • Freshly ground black pepper, to taste
  • Optional: chili flakes
  • Optional: baby arugula or mixed greens
  • Optional: turkey slices
  • Optional: capers
  • Optional: basil or thyme

Instructions

  1. Heat your oven to 475°F (245°C). Put a pizza stone or a baking sheet inside the oven while it preheats so the surface gets hot and ready for baking.
  2. On a lightly floured work surface, roll the pizza dough into your preferred shape and thickness. Try to make it large enough to fit comfortably on the stone or baking sheet without stretching it too thin.
  3. In a small bowl, stir together the olive oil, water, chopped parsley, grated garlic, lemon zest, 1 tablespoon of the lemon juice, salt, and black pepper. Mix until the ingredients are evenly combined and the herbs are well dispersed.
  4. Brush this lemon-herb mixture across the top of the dough, making sure to cover the surface evenly. This layer seasons the crust and gives the pizza its signature flavor.
  5. Tear or slice the mozzarella and distribute it over the dough. Sprinkle the parmesan over the top so the cheese melts together into a rich, savory layer.
  6. Transfer the assembled pizza carefully onto the preheated stone or baking sheet. Bake for 10 to 12 minutes, or until the crust turns golden and the cheese becomes melted and bubbly.
  7. Remove the pizza from the oven and immediately drizzle the remaining lemon juice over the top. Finish with fresh parsley and a few turns of black pepper for extra brightness.
  8. Add any optional toppings you like, such as chili flakes, arugula, turkey slices, capers, basil, or thyme. Slice the pizza and serve it warm for the best texture and flavor.
