  • 2 tablespoons powdered sugar or erythritol
  • Zest from 1 lemon
  • A scant 1/4 teaspoon salt
  • 1/8 teaspoon baking soda
  • 2 tablespoons butter or coconut oil
  • 1 teaspoon pure vanilla extract
  • 2 teaspoons lemon juice
  • Optional powdered sugar or erythritol for coating

Instructions

  1. Melt the butter or coconut oil and let it cool just slightly so it is warm but not hot. This helps it blend smoothly into the dough without scrambling the texture.
  2. In a medium bowl, combine the almond flour, powdered sugar or erythritol, lemon zest, salt, and baking soda. Stir these dry ingredients together so they distribute evenly.
  3. Add the melted butter or oil, vanilla extract, and lemon juice. Mix everything until a dough forms. The dough should feel soft and cohesive, with no dry patches left behind.
  4. Use a spoon or cookie scoop to portion the dough into small balls. Roll them gently with your hands until smooth. If the dough feels too soft, chill the balls until firm. For a chewier cookie, refrigerate the dough balls for several hours or overnight. If you are short on time, you can bake them right away.
  5. If you want a sweet exterior, roll each dough ball in extra powdered sugar or erythritol before baking. This adds a pretty finish and a little extra sweetness on the outside.
  6. Preheat the oven to 325°F. Line a baking sheet with parchment paper so the cookies bake evenly and lift off easily after baking.
