These Homemade Lemon Crumb Bars bring together a creamy, citrusy filling with a buttery oat crust and a golden crumble on top. They are simple to make, full of bright lemon flavor, and perfect for everything from casual snacking to sharing at a gathering.

  • 1 cup all-purpose flour
  • 1 cup old-fashioned oats
  • 1/4 teaspoon salt
  • 3/4 teaspoon baking soda
  • 10 tablespoons unsalted butter, melted
  • 1/2 cup packed light brown sugar
  • 1 teaspoon pure vanilla extract
  • 1 can sweetened condensed milk, 14 oz
  • 2 tablespoons sour cream or plain yogurt
  • 1 large egg yolk
  • 1/4 cup fresh lemon juice
  • 1 tablespoon finely grated lemon zest

Instructions

  1. Set your oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper and lightly coat it with nonstick spray.
  2. In one bowl, mix the flour, oats, salt, and baking soda. In a second bowl, stir together the melted butter, brown sugar, and vanilla until smooth.
  3. Add the dry ingredients to the wet mixture and stir until combined. Scoop out about 3/4 cup of the crumb mixture and save it for the topping. Press the rest evenly into the bottom of the pan.
  4. Bake the crust for 10 minutes.
  5. While that bakes, whisk the condensed milk, sour cream, egg yolk, lemon juice, lemon zest, and vanilla until creamy and fully blended.
  6. Pour the lemon filling over the warm crust, then scatter the reserved crumbs across the top.
  7. Return the pan to the oven and bake for 17 to 20 minutes, or until the top looks lightly golden and the filling is set.
  8. Let the bars cool completely before cutting them into squares.
