1/2 cup low-fat cheddar, shredded
1/2 cup breadcrumbs
4 jalapeños, seeded and diced
4 egg whites
6 tbsp fat-free cream cheese

Instructions
Preheat your oven to 400°F. Lightly coat a muffin tin with oil spray, making sure each cup gets a thin, even layer so the bites release easily after baking.
In a large bowl, add the ground beef, shredded cheddar, breadcrumbs, diced jalapeños, egg whites, salt, and pepper. Mix everything together until the ingredients are evenly incorporated and the mixture looks uniform throughout. Try not to overwork it; a light hand keeps the texture tender.
Spoon the meat mixture into the muffin tin, filling each cup about halfway. Press the mixture down just enough to help it hold its shape, but do not compress it too tightly.
Add about 1/2 tablespoon of fat-free cream cheese to the center of each filled cup. Keep the cream cheese tucked in the middle so it stays creamy and hidden inside the bites once they bake.
Top each muffin cup with more of the meat mixture until the cups are filled. Use the remaining mixture to cover the cream cheese completely, then lightly press the top so the filling is sealed inside. The mixture should divide evenly among 12 muffin cups.
Place the muffin tin in the oven and bake for 20 to 25 minutes, or until the bites are cooked through and lightly browned on top. Because ovens can vary, check the last few minutes closely so they do not dry out.
