This Honey Peach White Cheddar Grilled Cheese is a sweet-and-savory sandwich made with juicy peaches, melty white cheddar, honey, and buttery toasted bread. It is simple to make, full of summer flavor, and perfect for a quick lunch or cozy dinner.

  • 2 peaches, peeled and sliced
  • 4 slices sourdough bread, or challah, multigrain, or thick white bread
  • 2 to 4 tablespoons ricotta cheese, optional
  • 1 tablespoon honey
  • 4 slices white cheddar cheese, or more if you want extra cheese
  • 2 tablespoons butter
  • Optional: 4 slices crispy bacon
  • Optional: fresh basil
  • Optional: balsamic glaze

Instructions

  1. Peel the peaches if needed, then slice them into thin, even pieces. Set them aside while you prepare the bread.
  2. Lay the bread slices on a clean surface. If you are using ricotta, spread a thin layer over the inside of each slice.
  3. Place the peach slices on one side of the sandwich. Drizzle the honey over the peaches so they are lightly coated and glossy.
  4. Add the white cheddar to the other side of the bread. Use enough cheese to create a good melty layer.
  5. Close the sandwich by bringing the two sides together. Press gently so the filling stays in place.
  6. Spread butter over the outside of each bread slice. Cover the surface evenly so the sandwich browns well.
  7. Heat a skillet over medium-low heat, or preheat a panini press. Keep the heat gentle so the bread does not brown before the cheese melts.
  8. Place the sandwich in the skillet or press. Cook until the bread turns golden and the cheese becomes fully melted and soft.
  9. If the bread starts to color too quickly, lower the heat and continue cooking more slowly.
  10. Remove the sandwich from the heat. If you are using bacon, basil, or balsamic glaze, add those toppings now.
  11. Serve immediately while the sandwich is warm and the cheese is still stretchy and melted.

Notes

  • This sandwich tastes best fresh from the pan.
  • White cheddar gives the strongest flavor, but Monterey Jack also works if you want a milder melt.
  • Sourdough holds up especially well, but any sturdy bread can work.
  • If you want a richer sandwich, keep the ricotta. If you want a simpler one, skip it.
