For the Chicken

  • 1 pound boneless, skinless chicken breasts, cut into 1-inch cubes
  • 1/4 cup honey
  • 1/4 cup lime juice
  • 1 tablespoon soy sauce
  • 1 teaspoon minced garlic
  • 1 teaspoon grated ginger
  • Salt and pepper, to taste

For the Rice

  • 1 cup white rice
  • 1 1/2 cups water
  • 1/4 teaspoon salt
  • 1 avocado, peeled and diced
  • 1/4 cup cilantro, chopped
  • 1/4 cup red onion, diced
  • 1 lime wedge

Instructions

  1. Make the marinade and coat the chicken
    Add the honey, lime juice, soy sauce, garlic, ginger, salt, and pepper to a bowl. Whisk until the mixture looks smooth and combined. Add the chicken cubes and toss well so every piece gets covered in the marinade. Cover the bowl and let the chicken rest for at least 20 minutes. For deeper flavor, marinate it overnight in the fridge.
  2. Cook the rice
    Place the rice, water, and salt into a medium saucepan. Bring everything to a boil over medium-high heat. Once it starts boiling, turn the heat down to low, cover the pan, and let the rice simmer for about 18 minutes, or until the grains are tender and the water has been absorbed. Remove the pan from the heat and let it sit, still covered, for 5 minutes.
  3. Finish the rice with fresh ingredients
    Uncover the rice and fluff it with a fork. Add the diced avocado, chopped cilantro, and diced red onion. Squeeze the lime wedge over the top, then gently mix everything together. Stir carefully so the avocado keeps some shape and the rice stays light and fluffy.
  4. Cook the chicken
    Heat a skillet over medium heat. Add the marinated chicken to the pan, including a little of the marinade for extra flavor. Cook the chicken for 7 to 10 minutes, stirring occasionally, until the pieces are browned on the outside and cooked all the way through. The honey should create a glossy, caramelized coating as the chicken finishes.
  5. Assemble the stack
    Spoon a generous layer of the avocado rice into a bowl or onto a plate. Add the honey lime chicken on top. Finish with a little more cilantro or an extra lime wedge, if desired. Serve immediately and enjoy while everything is warm and fresh.

Notes

  • For a spicy version, add a pinch of red pepper flakes or some sliced jalapeños to the marinade.
  • To help the avocado stay green, toss it with a little lime juice before mixing it into the rice.
