Roasted Sweet Potatoes

  • 1 large sweet potato, peeled and cut into ½-inch cubes (about 3 cups)
  • 1 tablespoon avocado oil
  • ½ teaspoon garlic powder
  • ½ teaspoon smoked paprika
  • ½ teaspoon fine sea salt
  • Black pepper, to taste

Pan-Seared Chicken

  • 1½ lbs boneless, skinless chicken thighs (about 5–6 thighs)
  • 1 tablespoon avocado oil
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried thyme
  • ½ teaspoon onion powder
  • ¾ teaspoon fine sea salt
  • ¼ teaspoon black pepper

Maple Dijon Dressing

  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons Dijon mustard
  • 1½ tablespoons pure maple syrup
  • 1 small garlic clove, finely grated or minced
  • ¼ teaspoon fine sea salt
  • Black pepper, to taste

For the Bowls

 

  • 5 cups chopped kale, tough stems removed
  • 1 crisp red apple (such as Honeycrisp or Pink Lady), thinly sliced
  • ⅓ cup dried cranberries
  • ⅓ cup roasted pecans, roughly chopped

Instructions

  1. Preheat your oven to 450°F and line a large, rimmed baking sheet with parchment paper. Add the cubed sweet potatoes directly onto the pan, then toss them with the avocado oil, garlic powder, smoked paprika, salt, and pepper until every piece is evenly coated. Spread the cubes out into a single, even layer, making sure they aren’t touching too closely, then roast for 18 to 20 minutes, giving the pan a toss about halfway through, until the sweet potatoes are browned around the edges and fully tender. Keeping the cubes close to half an inch is important here, since this size is what keeps the overall cook time quick.
  2. While the sweet potatoes get started roasting, pat the chicken thighs thoroughly dry using paper towels — removing excess surface moisture helps them sear properly later. Season both sides of each thigh generously with the garlic powder, smoked paprika, dried thyme, onion powder, salt, and pepper, pressing the seasoning gently into the meat so it adheres well.
  3. Heat a large skillet over medium-high heat. Once the skillet is hot, add the avocado oil and let it heat through for a moment. Place the seasoned chicken thighs into the skillet in a single layer, making sure they aren’t overcrowded. Let them cook undisturbed for about 5 to 6 minutes on the first side, until they develop a deep golden-brown crust. Flip each thigh over and continue cooking for another 4 to 6 minutes, or until the chicken is cooked all the way through and reaches an internal temperature of at least 165°F. Transfer the cooked chicken to a cutting board and let it rest for about 5 minutes before slicing, which helps keep the meat juicy.
  4. While the chicken and sweet potatoes are cooking, whisk together the olive oil, apple cider vinegar, Dijon mustard, maple syrup, grated garlic, salt, and pepper in a small bowl until the mixture looks well combined and emulsified into a smooth dressing. Taste it and adjust the salt or maple syrup slightly if you’d like more seasoning or sweetness.
  5. Place the chopped kale into a large mixing bowl and drizzle about 1 tablespoon of the prepared maple Dijon dressing over it. Using clean hands, massage the kale gently but thoroughly for about 30 to 60 seconds, working the dressing into the leaves until the kale turns slightly darker green and noticeably softer, while still holding onto some of its structure.
  6. Once the chicken has finished resting, slice each thigh across the grain into roughly ½-inch-thick slices.
  7. Divide the massaged kale evenly among four serving bowls. Top each bowl with a portion of the roasted sweet potatoes, sliced chicken, apple slices, dried cranberries, and chopped pecans. Drizzle the remaining maple Dijon dressing generously over each bowl and serve immediately while everything is still warm.

Notes

  • Chicken thighs: Boneless, skinless thighs are strongly preferred here, since they stay juicy, flavorful, and forgiving throughout the pan-searing process. They also reheat noticeably better than chicken breast if you’re planning to eat leftovers.
  • Chicken breast substitution: Boneless, skinless chicken breast can be used in place of thighs. If the breasts are particularly thick, slice them horizontally into thinner cutlets first so they cook through quickly and evenly.
  • Dried cranberries: For a strict paleo version, look specifically for unsweetened or fruit-sweetened dried cranberries rather than ones sweetened with refined sugar.
  • Meal prep: Store the chicken, sweet potatoes, kale, dressing, and toppings separately whenever possible for the best texture, and wait to slice the apple until shortly before serving so it stays crisp and doesn’t brown.
