  • 4 oz feta cheese, crumbled
  • 1 cup plain yogurt
  • 1/2 cup sour cream
  • 1 large garlic clove, minced
  • 2 tablespoons freshly squeezed lemon juice
  • 1 tablespoon freshly chopped parsley
  • 1 tablespoon freshly chopped dill
  • 1 teaspoon dried oregano
  • Salt, to taste

Instructions

  1. Cook the fries according to the package instructions, but aim for the longer end of the cook time so they come out deeply golden and extra crispy. You want them firm enough to hold the sauce without turning soggy.
  2. While the fries are baking or frying, make the feta sauce. Add the crumbled feta, plain yogurt, sour cream, minced garlic, lemon juice, parsley, dill, oregano, and salt to a medium bowl.
  3. Stir everything together until the mixture looks creamy and well combined. You can make this sauce several hours ahead of time or even the day before. Letting it rest gives the flavors time to blend.
  4. When the fries finish cooking, take them out immediately and season them with salt while they are still hot. This helps the salt cling to the surface.
  5. Transfer the fries to a large serving platter or a big bowl. Spread them out so the toppings distribute more evenly.
