Deeply browned mushrooms and golden, crispy-edged cauliflower come together in one skillet with garlic, fresh herbs, and a touch of butter for a nourishing, low-carb side dish that’s simple enough for a weeknight and flavorful enough to double as a light meal on its own.

  • 4 tablespoons unsalted butter (or ghee)
  • 1 tablespoon olive oil
  • ½ onion, chopped
  • ½ head cauliflower, cut into florets
  • 1 pound (500 g) mushrooms, cleaned
  • 2 tablespoons low-sodium vegetable stock
  • 1 teaspoon fresh thyme leaves, chopped
  • 2 tablespoons fresh parsley, chopped
  • 4 cloves garlic, minced
  • ½ teaspoon salt and pepper, or to taste

Instructions

  1. Place a large pan or skillet over medium-high heat and add the unsalted butter along with the olive oil, letting the butter melt fully into the oil. Once the fat is hot and shimmering, add the chopped onion and sauté, stirring occasionally, until it turns soft and translucent, about 3 minutes.
  2. Add the cleaned mushrooms directly into the pan with the softened onion. Cook them for about 4 to 5 minutes, stirring and turning them so they brown on all sides. As they cook, the mushrooms will release a noticeable amount of moisture — continue cooking until most of that liquid has evaporated and the mushrooms are well browned, giving them a little extra time in the pan if needed to avoid ending up with a soggy final dish. Keep a close eye on them during this stage so they brown nicely without burning.
  3. Once the mushrooms are well browned throughout, add the cauliflower florets directly into the same pan. Continue cooking, stirring occasionally, until the cauliflower turns golden and develops crispy, browned edges, which should take about 8 to 10 minutes. Both the mushrooms and cauliflower should look well browned by the end of this step, since that browning is what builds most of the dish’s flavor.
  4. Pour the low-sodium vegetable stock into the pan with the browned vegetables, stirring to combine. Let everything cook together for about 2 minutes, allowing the stock to reduce slightly and coat the mushrooms and cauliflower in a light sauce.
  5. Add the chopped fresh thyme, one tablespoon of the chopped parsley, and the minced garlic directly into the pan. Cook for about 30 seconds, stirring constantly, just until the garlic becomes fragrant — be careful not to let it cook much longer than that, since garlic can burn and turn bitter quickly. Season the entire skillet generously with salt and pepper to taste, then sprinkle the remaining tablespoon of parsley over the top. Serve the garlic mushrooms and cauliflower skillet immediately while it’s still hot.
