This Fluffy Cottage Cheese Blueberry Cloud Bread is light, soft, and airy with a gentle sweetness from blueberries and a creamy cottage cheese base. It works beautifully for breakfast, a snack, or a lighter treat when you want something simple but special.

  • 1/2 cup full-fat cottage cheese, drained well and blended until smooth
  • 1 tablespoon cornstarch
  • 1/4 teaspoon cream of tartar

  • 1/2 teaspoon lemon zest, optional
  • 1/2 cup fresh blueberries

Instructions

  1. Heat the oven and prepare the pan.
    Preheat the oven to 350°F (180°C). Grease an 8-inch round or square baking dish so the bread releases easily after baking.
  2. Whip the egg whites.
    Place the egg whites and cream of tartar in a clean, dry bowl. Beat them until stiff peaks form. The mixture should look glossy and hold its shape when the whisk lifts.
  3. Mix the yolk mixture.
    In a separate bowl, combine the egg yolks, blended cottage cheese, cornstarch, sweetener if using, vanilla, and lemon zest. Stir until the mixture looks smooth and evenly blended.
  4. Combine the mixtures gently.
    Add the whipped egg whites to the yolk mixture in batches. Fold carefully with a spatula until the batter is fully incorporated. Work slowly so you do not knock out the air.
  5. Add the blueberries.
    Gently fold the blueberries into the batter. Try to distribute them evenly without crushing them.
  6. Transfer to the baking dish.
    Pour the batter into the prepared dish and smooth the top lightly with a spatula.
  7. Bake.
    Bake for 25 to 30 minutes, or until the top turns golden and the bread feels springy when touched.
