  • 1/3 cup extra virgin olive oil
  • 3 tablespoons red wine vinegar
  • 2 cloves garlic, minced

  • 1/2 teaspoon kosher salt and pepper
  • 1/3 cup grated Pecorino Romano cheese, or grated parmesan cheese

Salad

 

  • 1 head iceberg lettuce, shredded (about 5 to 6 cups)
  • 1 head romaine lettuce, shredded (about 4 to 5 cups)
  • 1 can chickpeas, 15 ounces, drained and rinsed
  • 1/4 pound Italian salami, thinly sliced
  • 2 cups shredded mozzarella cheese

Instructions

  1. Add the olive oil, red wine vinegar, minced garlic, Dijon mustard, kosher salt, pepper, and Pecorino Romano cheese to a small bowl or a jar with a lid.
  2. Whisk the dressing ingredients together until fully combined, or seal the jar and shake it well until the mixture looks smooth and evenly blended.
  3. In a large salad bowl, add the shredded iceberg lettuce, shredded romaine lettuce, drained chickpeas, sliced Italian salami, and shredded mozzarella cheese.
