This Parmesan Vinaigrette Dressing brings together sharp vinegar, nutty parmesan, fresh garlic, and olive oil for a dressing that tastes bold, balanced, and incredibly fresh. It works beautifully on salads, vegetables, and grain bowls.

Ingredients

  • 3 tablespoons white wine vinegar
  • 1/3 cup extra virgin olive oil
  • 1/2 cup freshly grated parmesan cheese
  • 2 cloves garlic, roughly chopped
  • 1 teaspoon Italian seasoning
  • Pinch of red pepper flakes
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon freshly cracked black pepper
  • 1 teaspoon honey

Instructions

  1. Place the vinegar, olive oil, parmesan, garlic, Italian seasoning, red pepper flakes, salt, pepper, and honey into a small blender or food processor. Blend until the mixture looks smooth, creamy, and well combined.
  2. Stop and taste the dressing. Add a little more salt, black pepper, or red pepper flakes if you want a stronger finish. Blend again briefly to bring everything together.
  3. No blender? A whisk works too. Add all of the ingredients to a small bowl and whisk vigorously until the mixture looks blended, or pour everything into a mason jar, seal it tightly, and shake until combined.
  4. For an extra-smooth texture, an immersion blender also works well. Serve the dressing chilled or let it sit at room temperature for a few minutes before using.

Notes

Store leftover Parmesan Vinaigrette Dressing in a mason jar or airtight container in the refrigerator for up to four days. Shake or whisk again before serving, since separation is normal.
