  • 5 dried guajillo chiles
  • 3 dried ancho chiles
  • 2 cups beef broth
  • 1/4 cup apple cider vinegar
  • 1 onion
  • 6 cloves garlic
  • 2 tablespoons cumin
  • 2 teaspoons oregano
  • 1 teaspoon cloves
  • 1/2 teaspoon cinnamon
  • 2 bay leaves
  • Salt and pepper, to taste

  • 1/2 cup diced onion, for topping
  • 1/4 cup cilantro, for topping
  • 1 lime, cut into wedges

Instructions

  1. Prepare the chile peppers
    Remove the stems and seeds from the dried guajillo chiles and ancho chiles. This helps the sauce taste smoother and keeps the final consomé from turning bitter. Once cleaned, set the chiles aside for a quick toast.
  2. Toast the chiles to deepen the flavor
    Heat a dry skillet over medium heat and add the chiles for about 30 to 60 seconds. Turn them as they warm so they do not burn. As soon as they smell fragrant and slightly darker, remove them from the pan. This step wakes up the flavor and helps the sauce taste bold instead of flat.
  3. Blend the red chile sauce
    Place the toasted chiles in a blender with the beef broth, apple cider vinegar, onion, garlic, cumin, oregano, cloves, and cinnamon. Blend until the mixture becomes very smooth and even. Stop to scrape down the sides if needed so no dry chile pieces remain. If the blender struggles, add a little more broth to help everything move freely. The finished sauce should look glossy and silky.
  4. Load the slow cooker
    Put the beef chuck roast into the bottom of the slow cooker. Pour the chile sauce over the top so the meat gets fully coated. Add the bay leaves, then season with salt and pepper. Press the roast gently into the sauce so the flavor reaches all sides.
  5. Cook until the beef turns tender

  6. Shred the meat in the sauce

  7. Warm and fry the tortillas
    Heat the corn tortillas until they are flexible. Then dip each tortilla into the hot consomé and place it into a skillet with a thin layer of oil. Fry each side for about 15 to 30 seconds, just long enough for the tortilla to become pliable and lightly crisp at the edges. Keep them moving so they do not tear.
  8. Fill the tacos
    Spoon the shredded beef into each dipped tortilla and fold it over. Place the filled tacos in a single layer while they cook so the outside stays coated in that rich red sauce. Let the tortillas brown slightly so the surface turns glossy and flavorful.
  9. Serve with dipping sauce and toppings
