This Crispy Baked Cod recipe turns simple cod fillets into a tender, flavorful dinner with a creamy Parmesan topping that bakes into a golden crust. It is quick to make, easy to serve, and ideal for a weeknight meal that still feels a little special.

  • 4 fresh cod fillets, about 6 oz each
  • 1/3 cup mayonnaise
  • 1/2 cup grated Parmesan cheese, preferably fresh
  • 1 teaspoon lemon juice
  • 1 teaspoon garlic powder, or fresh minced garlic if preferred
  • 1/2 teaspoon salt, or to taste
  • 1/2 teaspoon pepper, or more if you like extra bite
  • chopped parsley, optional, for garnish

Instructions

  1. Set the oven to 400°F and allow it to fully preheat before the fish goes in. A properly heated oven helps the topping brown and cook evenly.
  2. Lightly coat a baking dish with oil, butter, or nonstick spray so the fish releases easily after baking.
  3. Place the cod fillets in the prepared dish in a single layer. Leave a little space between each piece so the heat can move around them evenly.
  4. In a medium bowl, combine the mayonnaise, Parmesan cheese, lemon juice, garlic powder, salt, and pepper. Stir until the mixture looks smooth, creamy, and evenly blended.
  5. Spread the mayo-Parmesan mixture over the top of each cod fillet. Use a spoon or spatula to cover each piece evenly so the coating bakes into a rich, golden layer.
