For the Potatoes

  • 2 1/2 lbs russet or Yukon gold potatoes, peeled
  • 2 cups heavy cream
  • 1 cup freshly grated Parmesan cheese
  • 3 tablespoons unsalted butter, cut into small pieces
  • 2 cloves garlic, minced or smashed
  • 1 teaspoon fresh thyme leaves, or 1/2 teaspoon dried thyme
  • Salt, to taste, about 1 teaspoon
  • Freshly ground black pepper, to taste

Optional Add-Ons

  • 1/4 teaspoon nutmeg
  • 1/2 cup shredded Gruyère or Fontina
  • Fresh parsley, chopped, for garnish

Instructions

  1. Preheat the oven and prep the baking dish.
    Set your oven to 375°F. Grease a 2–3 quart ceramic or glass baking dish with butter so the potatoes do not stick. For extra flavor, you can lightly dust the bottom and sides with a little Parmesan.
  2. Slice the potatoes evenly.
    Peel the potatoes, then cut them into 1/4-inch slices using a sharp knife or mandoline. Try to keep the slices uniform so they cook at the same speed. Rinse them in cold water to remove some of the surface starch, then dry them well with a clean kitchen towel.
  3. Warm the cream mixture.
    Place the heavy cream in a medium saucepan over low heat. Add the garlic, thyme, salt, pepper, and nutmeg if using. Stir occasionally and warm the mixture until it is just below a simmer. Do not let it boil. The goal is to gently infuse the cream with flavor.
  4. Build the layers.
    Arrange a layer of potato slices in the prepared baking dish, overlapping them slightly so the surface is mostly covered. Spoon a small amount of the warm cream mixture over the potatoes, then sprinkle on a thin layer of Parmesan. Continue layering potatoes, cream, and Parmesan until everything is used, ending with a generous layer of Parmesan on top.
  5. Add the butter.
    Scatter the small pieces of butter across the top layer. This helps the top brown nicely and adds extra richness.
  6. Bake covered.
    Cover the dish tightly with aluminum foil and bake for 40 minutes. This gives the potatoes time to soften while the cream cooks into the layers.
  7. Bake uncovered to finish.
    Remove the foil and return the dish to the oven for another 20–25 minutes, or until the top is deeply golden, crisp in spots, and bubbling around the edges. If the top browns too quickly, loosely cover it with foil while the potatoes finish baking.
  8. Rest and serve.
    Take the dish out of the oven and let it rest for 5–10 minutes before serving. This helps the cream thicken and makes the potatoes easier to scoop. Finish with chopped parsley or extra black pepper if desired, and serve warm.
