  • 1 small yellow onion, diced small
  • 1 cup sliced baby carrots (or 2 large carrots, peeled and diced)
  • 4 celery stalks, diced
  • 1 teaspoon garlic powder
  • 2 teaspoons fresh thyme (or 1 teaspoon dried)
  • 2 teaspoons fresh rosemary, minced (or 1 teaspoon dried)
  • 1 teaspoon chicken bouillon seasoning
  • ½ teaspoon salt, plus more to taste
  • ½ teaspoon paprika
  • ½ teaspoon adobo seasoning
  • ½ teaspoon black pepper
  • ¼ cup all-purpose flour
  • 1½ cups uncooked orzo
  • 3 cups chicken broth, plus more as needed
  • 1 cup heavy cream or half and half
  • 2 cups cooked chicken, shredded or chopped (rotisserie works great)
  • ½ to 1 cup frozen peas (or a mix of peas, corn, and green beans)
  • Fresh parsley, chopped, for garnish (parmesan optional)

Instructions

  1. Sauté the vegetables. Set a deep skillet over medium heat and melt the butter completely. Add the diced onion, carrots, and celery, and cook, stirring occasionally, until the vegetables have softened noticeably, roughly 5 to 6 minutes.
  2. Bloom the seasonings. Sprinkle in the garlic powder, fresh thyme, fresh rosemary, chicken bouillon seasoning, salt, paprika, adobo seasoning, and black pepper. Stir everything through the softened vegetables and let it cook for about 1 minute, just until the mixture smells fragrant and the herbs release their aroma.
  3. Build the roux. Sprinkle the all-purpose flour evenly over the vegetable mixture and stir continuously so every piece gets coated. Let this cook for roughly 1 minute — this short cooking time is what cooks off the raw, pasty taste of the flour before the liquid goes in.
  4. Simmer the orzo directly in the broth. Add the uncooked orzo to the skillet, then slowly pour in the chicken broth while stirring constantly so the flour mixture doesn’t clump. Bring everything up to a simmer and let it cook uncovered, stirring occasionally to keep anything from sticking to the bottom of the pan, until the orzo turns tender and most of the liquid has been absorbed — this generally takes about 10 minutes. If the mixture looks too thick at any point, pour in a little extra broth to loosen it back up; it’s common to need a splash more than the recipe calls for to get the texture just right.
  5. Stir in the cream and chicken. Pour in the heavy cream (or half and half) and add the shredded or chopped cooked chicken. Stir well and let everything cook together for another 2 to 3 minutes, until the chicken is warmed through and the whole mixture turns glossy and creamy.
  6. Add the peas and finish seasoning. Stir in the frozen peas (or your preferred mix of frozen vegetables) and cook for another 1 to 2 minutes, just until heated through. Taste the dish at this point and adjust the salt, pepper, or seasoning blend to your preference.
  7. Garnish and serve. Sprinkle fresh chopped parsley over the top, along with parmesan if you’d like it, and serve warm right out of the skillet alongside warm biscuits or a simple side salad.

Notes

  • Gluten-free option: Swap in a gluten-free orzo (or another gluten-free short pasta you prefer) along with a gluten-free 1:1 flour blend for the roux.
  • Storage: Allow the dish to cool completely before transferring it to an airtight container. It keeps well in the refrigerator for up to 3 to 4 days.
  • Reheating: The orzo continues to absorb liquid as it sits, so it will thicken noticeably in the fridge. Add a splash of broth or water when reheating to restore the creamy texture, warming it gently on the stovetop over low heat or in the microwave in 30-second increments, stirring between each one.
