Shredded zucchini, sharp cheddar, and fresh herbs come together in these baked bites — crisp on the outside, soft and cheesy in the middle, and perfect for dunking straight into a bowl of ranch.

  • 2 cups shredded zucchini, thoroughly patted dry (from about 2 medium zucchini)
  • 1¼ cups plain panko bread crumbs
  • 1 cup shredded cheddar cheese
  • 1 large egg
  • ½ cup finely chopped green onion
  • 2 tablespoons chopped fresh dill
  • 1 teaspoon kosher salt, or to taste
  • 1 teaspoon garlic powder
  • Ranch dressing, for serving

Instructions

  1. Preheat your oven to 400°F. Line a large baking sheet with a sheet of parchment paper and set it to the side — this keeps the bites from sticking and makes cleanup effortless once they’re done baking.
  2. In a large mixing bowl, add the shredded zucchini, panko bread crumbs, shredded cheddar cheese, egg, chopped green onion, chopped dill, kosher salt, and garlic powder. Stir everything together thoroughly with a spatula or your hands until the mixture is evenly combined and no dry pockets of panko remain visible.
  3. Working one tablespoon at a time, scoop up a portion of the zucchini mixture and press it firmly between your palms to form a small, compact ball. Place each formed ball onto the prepared baking sheet, spacing them a couple of inches apart. Continue scooping and shaping until the entire bowl of mixture has been used, which should give you a full tray of bites.
  4. Transfer the baking sheet to the preheated oven and bake for about 30 minutes total, flipping each bite over carefully at the halfway mark so both sides have the chance to brown and crisp evenly. They’re done once the exterior is deeply golden brown and firm to the touch.
  5. Remove the tray from the oven and let the bites sit for a minute or two to firm up slightly. Serve them warm, with a bowl of ranch dressing on the side for dipping, if you’d like.
