This Blackberry Cottage Cheese Chicken Salad is a refreshing low-carb lunch made with tender chicken, creamy cottage cheese, juicy blackberries, crunchy celery, green onions, and walnuts. It is bright, satisfying, and easy to make ahead for quick lunches, meal prep, or a light dinner.

Ingredients

Scale
  • 2 chicken breasts
  • 1 cup cottage cheese
  • 1/4 cup mayonnaise
  • 2 celery stalks, diced
  • 2 green onions, sliced
  • 1/2 cup blackberries, halved or quartered depending on size
  • 1/2 teaspoon salt and pepper
  • 1/4 cup chopped walnuts
  • Keto bread, optional

Instructions

  1. Cook the chicken using your preferred method. You can bake, boil, or grill the breasts until they are fully cooked through. Once done, let them cool slightly so they are easier to handle, then shred them or cut them into small bite-sized pieces.
  2. While the chicken cools, prepare the rest of the mix-ins. Dice the celery into small pieces and slice the green onions thinly. Rinse the blackberries and cut them in half or quarters depending on their size.
  3. Add the chicken, celery, green onions, blackberries, and walnuts to a large mixing bowl. Toss gently so the ingredients begin to distribute evenly.
  4. Spoon in the cottage cheese and mayonnaise. Stir everything together until the chicken and vegetables are coated and the salad looks creamy and well mixed.
  5. Season the mixture with salt and pepper. Taste and adjust if needed so the flavors feel balanced.
  6. Serve immediately, or chill first for a colder, firmer texture. Enjoy it on its own, scoop it into lettuce wraps, or serve it on your favorite keto bread for a sandwich-style lunch.

Notes

  • Use generous blackberries for the best flavor and color.
  • If you dislike the texture of cottage cheese curds, blend the cottage cheese first for a smoother result.
  • Store leftovers in an airtight container in the refrigerator for 3 to 5 days.
  • Do not freeze this salad, since the texture changes too much after thawing.
  • This recipe works well for meal prep and makes an easy cold lunch for busy days.
