  • 1 cup barbecue sauce
  • 15 ounces tomato sauce
  • 2 cups shredded cheddar cheese

Cornbread Topping:

  • 1/2 cup yellow cornmeal
  • 1/2 cup whole milk
  • 1/2 cup all-purpose flour
  • 1/3 cup sugar
  • 1/4 teaspoon salt
  • 1 teaspoon baking powder
  • 1 large egg
  • 1/4 cup unsalted butter, melted

Instructions

  1. Heat the oven to 400°F and lightly coat a 9×9-inch baking dish with cooking spray.
  2. In a large skillet over medium heat, cook the ground chicken with the onion and bell pepper until the chicken is no longer pink and the vegetables have softened, about 5 to 6 minutes.
  3. Stir in the barbecue sauce and tomato sauce, bring the mixture to a gentle boil, then lower the heat and simmer for 5 minutes.
  4. In a separate bowl, whisk together the cornmeal, milk, flour, sugar, salt, baking powder, egg, and melted butter until smooth.
  5. Spread the chicken mixture into the prepared baking dish, sprinkle the cheddar cheese over the top, then gently pour the cornbread batter over everything.
  6. Bake for 30 to 35 minutes, or until the top turns golden and the cornbread is cooked through.
