This Baked Cod with Lemon and Garlic recipe features tender cod fillets coated in Mediterranean spices, seared for color, then finished in a bright lemon-garlic sauce. It is quick, flavorful, and perfect for a light yet satisfying dinner.

Ingredients

  • 1.5 lb cod fillets, cut into 4 to 6 pieces
  • 1/4 cup chopped fresh parsley leaves

Lemon Sauce

  • 5 tbsp fresh lemon juice
  • 5 tbsp extra virgin olive oil
  • 2 tbsp melted butter
  • 5 garlic cloves, minced

For the Coating

 

  • 1/3 cup all-purpose flour
  • 1 tsp ground coriander
  • 3/4 tsp sweet Spanish paprika
  • 3/4 tsp ground cumin
  • 3/4 tsp salt
  • 1/2 tsp black pepper

Instructions

  1. Heat your oven to 400°F so it is ready when the fish goes in.
  2. In a shallow bowl, whisk together the lemon juice, olive oil, and melted butter. Keep the minced garlic out of this bowl for now and set the mixture aside.
  3. In a second shallow bowl, combine the flour, coriander, paprika, cumin, salt, and black pepper. Stir until the spices are evenly distributed through the flour.
  4. Pat the cod fillets dry with paper towels. Dip each piece into the lemon mixture first, then press it into the seasoned flour mixture. Turn it so the coating clings to all sides, then shake off any loose flour. Save the remaining lemon mixture for later.
  5. Set a cast iron skillet or other oven-safe pan over medium-high heat. Add 2 tablespoons of olive oil and let it heat until it shimmers but does not smoke. Add the cod fillets and sear them for about 2 minutes per side, just long enough to build color on the outside. Do not cook them all the way through yet. Remove the skillet from the heat when finished.
  6. Stir the minced garlic into the reserved lemon mixture. Spoon or drizzle that mixture all over the fish fillets in the skillet.
  7. Transfer the skillet to the preheated oven and bake until the cod flakes easily with a fork. This usually takes about 10 minutes, though you should start checking a little earlier depending on the thickness of the fillets.
  8. Remove the pan from the oven and immediately sprinkle the chopped parsley over the top. Serve the fish right away.

Notes

  • For better color, keep the searing step in the method and use a fish spatula when turning the fillets.
