Caramelized butternut squash and Brussels sprouts, seared chicken thighs, and pillowy cheese tortellini come together in a rich garlic butter sauce for a hearty, one-skillet harvest dinner that’s as easy to clean up as it is satisfying to eat.
Step 1: Roast the Seasonal Vegetables
Preheat your oven to 400°F. In a large mixing bowl, toss the cubed butternut squash with a portion of the olive oil along with a generous pinch of salt and pepper, making sure every piece is evenly coated. Spread the seasoned squash out in a single, even layer across a parchment-lined baking sheet, giving the pieces enough space so they roast rather than steam. Place the sheet in the oven and roast for 30 minutes, until the squash turns tender and caramelized at the edges.
