  • 2 tablespoons vanilla extract
  • 1 tablespoon apple pie spice
  • 1 tablespoon heavy whipping cream
  • ½ cup granulated sugar, divided
  • 20 ounces apple pie filling
  • 5 medium-large flour tortillas
  • 1 large egg
  • 1½ cups graham cracker crumbs
  • 1 tablespoon ground cinnamon

Instructions

  1. Begin by making the cheesecake filling. In the bowl of a food processor, combine the room-temperature cream cheese, vanilla extract, apple pie spice, heavy whipping cream, 6 tablespoons of the granulated sugar, and ½ cup of the apple pie filling. Blend everything together until the mixture is completely smooth and fully combined, with no visible streaks of cream cheese remaining.
  2. Transfer the finished cheesecake filling into a bowl, cover it, and place it in the refrigerator to chill while you move on to preparing the taco shells. Set the remaining apple pie filling aside in a separate bowl as well, since you’ll need both components later for filling and topping the finished tacos.
  3. Lay one flour tortilla flat on a clean work surface. Using a round biscuit cutter, or even the rim of a small drinking glass, cut three circles out of the tortilla, positioning them carefully so they don’t overlap. Repeat this process with each remaining tortilla until you have a total of 15 small tortilla circles.
  4. Preheat your air fryer to 350°F using the air fryer setting.
  5. Take a sheet of aluminum foil and fold it into three separate connected sections, pinching the ends together to form a kind of taco-shaped holder that will keep each shell propped open while it cooks. Place this folded foil piece directly into the air fryer basket.
  6. Crack the egg into a small bowl and beat it lightly. In a separate bowl, stir together the graham cracker crumbs, ground cinnamon, and the remaining granulated sugar until evenly combined.
  7. Take one tortilla circle and dip it into the beaten egg, letting any excess egg drip back off into the bowl before moving on. Next, dip the egg-coated tortilla circle into the graham cracker crumb mixture, pressing gently and turning it so that both sides are fully and evenly coated.
  8. Without letting the two sides touch each other completely, fold the coated tortilla circle upward on both sides to form a taco shape, leaving a slight gap in the middle so it holds its shell-like form.
  9. Carefully place the folded tortilla into one of the sections of the foil holder inside the air fryer basket. Repeat the dipping, coating, and folding process with additional tortilla circles until you have 4 to 6 shells sitting in the foil sections. None of the shells should overlap one another, though it’s fine if they touch slightly along the edges.
  10. Once all the shells for this batch are in place, cook them in the air fryer for approximately 8 to 12 minutes, checking periodically, until the shells turn golden brown and crisp throughout.
  11. Once golden and crispy, carefully remove the shells from the air fryer and transfer them to a wire cooling rack. Repeat the entire coating, folding, and air frying process with the remaining tortilla circles until all of them have been cooked. Allow all of the finished shells to cool completely before filling them, since a warm shell can cause the cheesecake filling to soften too quickly.
  12. Once the shells have cooled fully, fill each one with 1 to 2 tablespoons of the chilled cheesecake filling. Top each filled shell with 1 to 2 teaspoons of the reserved apple pie filling.
  13. Finish the tacos with a light sprinkle of additional cinnamon and sugar, then drizzle with caramel sauce before serving.
