White Chicken Lasagna Soup is a cozy, creamy, and satisfying one-pot meal that turns the classic flavors of lasagna into a spoonable comfort dish. It features tender chicken, melted cheese, Italian herbs, and soft pasta in a rich, flavorful broth.

  • 1 lb boneless, skinless chicken breasts, cooked and shredded
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 can diced tomatoes
  • 1 tsp Italian seasoning
  • 8 oz lasagna noodles, broken into pieces
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup heavy cream
  • Salt and pepper, to taste
  • Fresh basil, for garnish

Instructions

  1. Warm a large pot over medium heat and cook the onion and garlic until soft and fragrant.

  2. Pour in the chicken broth, diced tomatoes, Italian seasoning, and shredded chicken. Bring everything to a boil.

  3. Add the broken lasagna noodles, then lower the heat and simmer until the pasta is tender.

  4. Stir in the mozzarella and Parmesan until fully melted and the soup turns creamy.

  5. Add the heavy cream, then season with salt and pepper as needed.
