A bright, no-bake snack mix that tastes like strawberry shortcake — crunchy Rice Chex tossed in a creamy white-chocolate & strawberry coating, rolled in powdered sugar and freeze-dried strawberry dust. Quick to make, fun to shake, and perfect for parties or snack jars.

Ingredients

  • 5 cups Rice Chex cereal
  • 1 cup white chocolate chips (or white melting wafers)
  • ¼ cup unsalted butter
  • ¼ cup dry strawberry cake mix
  • ½ cup powdered (confectioners’) sugar
  • ½ cup freeze-dried strawberries, crushed to a powder
  • ½ teaspoon vanilla extract
  • ½ cup mini marshmallows (optional)
  • ¼ cup crushed Golden Oreos (optional)

Instructions

  1. Place the Rice Chex in a large, roomy bowl and set it aside so you’re ready to coat.

  2. In a microwave-safe bowl, melt the white chocolate and butter together in short bursts (15–20 seconds), stirring each time until silky and lump-free.

  3. Stir the vanilla and the dry strawberry cake mix into the melted chocolate until the color and flavor are uniform.

  4. Pour the pink chocolate mixture over the cereal. Fold gently with a spatula until the Chex pieces are evenly glazed. Try not to crush the cereal.

  5. In a large resealable plastic bag, combine the powdered sugar and the crushed freeze-dried strawberries.

  6. Working in batches if needed, add the coated cereal to the bag, seal, and shake thoroughly until every piece wears a light dusting.

  7. Spread the finished mix on a baking sheet in a single layer and let it cool and set for 10–15 minutes.

  8. Once dry, stir in the mini marshmallows and/or crushed Golden Oreos if you’re using them.

  9. Store the snack in an airtight container at room temperature for up to a week.

Notes

Quick tips: use quality white chocolate for the smoothest coating; crush the freeze-dried strawberries finely so they adhere well; add the marshmallows only after the mix has cooled so they don’t melt.
