This cozy chicken dish brings the best of Asian comfort cooking straight to your table. Tender, golden-browned chicken thighs soak up a rich soy-garlic-ginger broth, creating a dish that’s both soothing and flavorful. Served over warm jasmine rice, it’s a hug in a bowl — savory, aromatic, and impossible not to love.

Ingredients

Scale
  • 4 bone-in, skin-on chicken thighs
  • 1 tbsp vegetable oil
  • 3 tbsp soy sauce
  • 2 tbsp brown sugar
  • 1 tbsp freshly grated ginger
  • 4 cloves garlic, finely minced
  • 2 cups chicken stock
  • 1 tbsp sesame oil
  • 1 tsp cornstarch (optional, for thicker broth)
  • Salt and black pepper, to taste
  • 2 cups jasmine rice
  • 4 cups water
  • Chopped green onions, for garnish
  • Fresh cilantro, for garnish

Instructions

  1. Season the Chicken: Pat the chicken dry with paper towels, then season both sides with salt and pepper.
  2. Sear for Flavor: Heat vegetable oil in a large pot or deep skillet over medium-high heat. Add the chicken, skin-side down, and let it sizzle undisturbed for 5–6 minutes until the skin turns beautifully crisp and golden.
  3. Build the Sauce: Flip the chicken and toss in the soy sauce, brown sugar, garlic, and ginger. Stir gently as the aromas hit you — it should smell heavenly.
  4. Simmer in Broth: Pour in the chicken stock, scraping up any caramelized bits from the bottom. Bring it to a gentle boil, then lower the heat, cover, and simmer for 20 minutes until the chicken is cooked through and tender.
  5. Cook the Rice: While the chicken simmers, rinse the jasmine rice until the water runs clear. Combine it with water in a pot, bring to a boil, then cover and simmer on low for 15–20 minutes until fluffy.
  6. Thicken (Optional): For a richer, slightly thicker broth, whisk the cornstarch with a splash of water, then stir it into the simmering liquid. Cook for 2–3 minutes until it thickens slightly.
  7. Finish and Serve: Slice the chicken and spoon it over a bed of rice. Ladle the savory garlic-ginger broth on top, drizzle with sesame oil, and finish with a sprinkle of chopped green onions and cilantro.

Notes

This dish is pure comfort — a mix of sweet, savory, and aromatic that turns a simple weeknight dinner into something special. If you want extra flavor, add a splash of rice vinegar or a few drops of chili oil at the end.
