Ingredients

  • 2 cups Kodiak pancake mix (or any protein pancake mix you like)
  • 1 lb ground sausage, cooked and crumbled
  • 2 cups milk (Fairlife adds extra protein, FYI)
  • 2 large eggs
  • ¼ cup pure maple syrup (for a hint of sweetness)
  • 1 cup shredded cheese (cheddar or Colby jack are both delish)

Instructions

  • Preheat the oven to 400°F (200°C). Grease a mini muffin tin generously so the muffins pop out easily when done.
  • Mix the batter: In a large bowl, whisk together the pancake mix, milk, eggs, and maple syrup until smooth and lump-free.
  • Add the goodies: Stir in the crumbled sausage and shredded cheese until evenly combined.
  • Fill the cups: Spoon the batter into each muffin cup, about ¾ full. A small cookie scoop works great here.
