Ingredients

Scale

Cake Batter:

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 tablespoon melted butter
  • 1 egg (room temperature)
  • 1½ cups buttermilk (room temperature)

Cinnamon Streusel Filling:

  • 3 tablespoons softened butter
  • 1 tablespoon ground cinnamon
  • ½ cup all-purpose flour
  • ½ cup brown sugar

Crumb Topping:

  • ½ cup packed light brown sugar
  • ½ cup all-purpose flour
  • ½ tablespoon cinnamon
  • ¼ cup cold butter, cubed
  • ⅛ teaspoon salt

Sweet Drizzle:

  • ½ cup powdered sugar
  • 2½ teaspoons milk (add more as needed for consistency)

Instructions

  1. Preheat and Prep
    • Set your oven to 375°F (190°C). Grease a 9×9-inch baking dish (with 2-inch sides) or line it with parchment paper for easy cleanup.
  2. Make the Batter
    • In a large bowl, whisk together the flour, baking powder, baking soda, and salt.
    • In a separate bowl, whisk the melted butter, egg, and buttermilk until smooth.
    • Pour the wet mixture into the dry ingredients and stir gently until everything just comes together—don’t overmix!
  3. Layer It Up
    • Spread half the batter evenly in the baking dish.
  4. Make the Cinnamon Streusel Filling
    • In a small bowl, mash together the softened butter, cinnamon, flour, and brown sugar with a fork until crumbly.
    • Sprinkle the streusel mixture evenly over the batter layer.
    • Now, spoon the remaining batter over the streusel and smooth it out with a spatula.
  5. Add the Crumb Topping
    • In another bowl, combine the brown sugar, flour, cinnamon, salt, and cubed cold butter.
    • Use a fork or pastry blender to cut the butter into the mixture until you get coarse crumbs.
    • Generously scatter the crumb topping all over the cake.
  6. Bake
    • Bake for 30–40 minutes, or until a toothpick inserted into the center comes out clean.
    • Transfer to a wire rack and let it cool in the pan for about 15 minutes, then lift the cake out and cool completely before glazing.
  7. Make the Drizzle Glaze
    • In a small bowl, whisk together powdered sugar and milk until you have a smooth, pourable consistency. Add a splash more milk if needed.
    • Drizzle the glaze over the cooled cake using a spoon or piping bag.

Notes

  • This cake is buttery, moist, and lightly spiced — the perfect excuse to call dessert “breakfast.”
  • It pairs beautifully with a hot cup of coffee (obviously) or tea for a mid-morning pick-me-up.
  • For an extra indulgence, swap the milk in your glaze for heavy cream or buttermilk—it makes the drizzle even richer.
  • Add a pinch of nutmeg to the streusel for extra warmth.
  • Want texture? Toss in a handful of chopped nuts (pecans or walnuts) to the crumb topping.
