These High Protein Pepperoni Pizza Rolls are a cheesy, savory, high-protein snack or meal made with seasoned beef, pepperoni, tomato, and mozzarella wrapped up in a crisp tortilla. They come together fast, taste like pizza in handheld form, and work especially well for busy weeknights, meal prep, or a filling after-school snack.

For the filling

  • 14 oz crushed tomatoes
  • 0.5 oz flat-leaf parsley, finely chopped
  • 2 tsp dried oregano
  • 2.2 lb lean ground beef
  • 2 tsp onion powder
  • Spray oil
  • 2 tsp garlic powder
  • Salt and black pepper, to taste
  • 2 tbsp tomato paste
  • 2 tsp smoked paprika
  • 5.2 oz pepperoni, chopped into small pieces

For assembling

  • Sauce, as desired
  • 6 large wraps, about 10 inches each
  • 7.05 oz shredded low-fat mozzarella

Instructions

1. Season the beef

In a small bowl, stir together the onion powder, garlic powder, smoked paprika, and dried oregano. Mix well so the spices are evenly combined.

2. Cook the meat

Set a large skillet over medium-high heat and mist it with oil. Add the ground beef, then season with salt and pepper. Cook for about 5 minutes, breaking it up as it browns, until no pink remains.

3. Add the pepperoni and spices

Stir the chopped pepperoni and the spice mixture into the cooked beef. Let everything cook together for about 2 minutes, just until the pepperoni starts to release its flavor and lightly color.

4. Build the tomato filling

Add the crushed tomatoes, tomato paste, and chopped parsley to the pan. Stir until everything is well blended, then let the mixture simmer for 2 to 3 minutes so it thickens. Remove from the heat once the filling looks hearty and no longer watery.

5. Fill and roll

Lay the wraps flat on a clean surface. Divide the filling evenly between them, then top each one with shredded mozzarella. Add a little sauce if you like. Fold and roll each wrap tightly like a burrito.

6. Toast until crisp

 

Place the rolls seam-side down on a baking tray or in an air fryer basket. Lightly spray the tops with oil and add a little extra parsley if you want a fresh finish. Bake at 400°F (200°C) for 8 to 10 minutes, or air fry at 350°F (180°C) for 8 to 10 minutes, until the outside is crisp and the cheese has melted.

Notes

Let them cool for a few minutes before slicing or serving. Store leftovers wrapped well in foil or in airtight containers.
