  • 2 lbs (900g) Beef stew meat, cut into bite-size pieces
  • 1 lb (450g) Baby potatoes, halved or quartered if large
  • 4 tbsp Unsalted butter
  • 6 cloves Fresh garlic, minced
  • 1/2 cup Beef broth
  • 1 tbsp Worcestershire sauce
  • 2 tbsp Olive oil
  • 1tsp Dried thyme
  • 1 tsp Dried rosemary
  • Salt and black pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Brown the Beef
    Heat olive oil in a skillet over medium-high heat. Season the beef with salt and pepper. Sear in batches until browned on all sides. Transfer beef to the slow cooker.

  2. Build the Garlic Butter Base
    Reduce heat slightly and melt part of the butter in the same skillet. Add garlic and cook briefly until fragrant. Pour in beef broth and Worcestershire sauce, scraping up the browned bits from the pan. Stir in thyme and rosemary.

  3. Assemble the Slow Cooker
    Add potatoes to the slow cooker with the beef. Pour the garlic butter broth mixture over everything. Top with remaining butter.

  4. Slow Cook
    Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours, until the beef is fork-tender and the potatoes are soft.

  5. Finish & Serve
    Taste and adjust seasoning if needed. Garnish with chopped parsley and serve warm.

Notes

  • For extra flavor: Don’t skip browning the beef — it adds depth and richness.
  • Thicker sauce: Stir in a cornstarch slurry during the last 20 minutes if desired.
  • Veggie add-ins: Carrots or green beans work well; add during the last 1–2 hours.
  • Make it lighter: Reduce butter slightly and use low-sodium broth.
