These Crockpot French Dip Sandwiches are the kind of no-fuss comfort food that practically cooks itself. Slow-cooked beef turns juicy and tender, then gets piled onto warm rolls and served with savory au jus for easy dipping. It is an easy, crowd-pleasing dinner for busy nights, family meals, or game day.

  • 2 pounds beef chuck roast
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 2 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon soy sauce
  • 4 hoagie rolls
  • 4 slices provolone cheese, optional
  • Fresh parsley, optional for garnish

Instructions

  1. Use paper towels to dry the roast well. Then coat it with olive oil, salt, pepper, garlic powder, and onion powder.

  2. Heat a skillet over medium-high heat and brown the roast on all sides, about 3 to 4 minutes per side. You can skip this step if you want to keep things extra simple.

  3. Place the roast into the Crockpot.

  4. In a bowl, stir together the beef broth, Worcestershire sauce, and soy sauce. Pour the mixture over the meat.

  5. Cover and cook on low for about 8 hours, or until the beef is so tender it falls apart easily with a fork.

  6. Take the roast out of the slow cooker and let it sit for 5 minutes. Shred it with two forks into bite-size pieces.

  7. Return the shredded beef to the Crockpot for a few minutes so it can soak up more of the juices. While that happens, split the rolls open and, if using cheese, broil the provolone on top for 1 to 2 minutes until melty.

  8. Spoon the beef into each roll and serve with a small bowl of the cooking liquid for dipping. Add parsley on top if you want a fresh finish.
