Fluffy, lightly sweet, and studded with juicy berries—this simple cottage-cheese bake is an easy make-ahead breakfast (or snack) that’s creamy, protein-packed, and irresistibly comforting warm or cold.
Heat the oven to 350°F (175°C). Lightly grease a small baking pan or ramekin with butter or oil.
In a bowl, whisk the cottage cheese with the eggs, maple syrup (or honey), vanilla, and cinnamon until the mixture looks smooth and even.
Add the oat flour, baking powder, and a pinch of salt; stir just until everything is incorporated.
Fold the blueberries into the batter gently so they don’t burst.
Transfer the batter to the prepared pan and smooth the top.
Bake for 30–35 minutes, or until a toothpick inserted near the center comes out mostly clean and the top is lightly browned.
Remove from the oven and let the bake rest for a few minutes before slicing. Serve slightly warm or chilled.
Quick tip: If using frozen blueberries, fold them in straight from the freezer to help prevent the batter from turning blue.
